1 bonito, cleaned, whole or cut into steaks
3 onions sliced into rings
3 tomatoes sliced into rings
5 green peppers (cubanelles or hot peppers) diced
½ bunch parsley, chopped
3 tbsp. Olive oil
juice of ½ lemon
3 garlic cloves, minced
salt
5-6 whole black peppers
Heat the oven to 375 F.
Wash and drain the fish in a colander, then salt lightly and remove on another plate.
In a large bowl combine all the vegetables, with the olive oil, salt and pepper.
Grease a large baking dish, cover the bottom with ¾ of the vegetable mix, place the fish on top, cover with the remaining vegetables.
Bake for 30 minutes, drizzle with lemon juice, enjoy cold or at room temperature.
