Bean Salad

Ingredients:

  • 1 cup dried dermason beans, soaked overnight
  • aromatics to boil the beans with ( a bouquet garni, a clove of garlic, some tomato juice, lemon peels anything will do to build some flavor into the dish)
  • 2 tbsp red wine vinegar
  • salt
  • 1 medium red onion thinly sliced
  • 2 eggs, hard boiled (optional)
  • ½ cup fresh parsley finely chopped
  • 1 tsp salt
  • 1 tsp black pepper
  • 2 tbs red pepper flakes
  • ½ cup olive oil
  • 2 tbsp red wine vinegar
  • 1 tbsp lemon juice
  • red pepper flakes
  • sumac

Drain the soaked beans. Bring water to a boil in a large pot, add the beans, and the aromatics. When cooked, drain, add salt and 2 tbsp red wine vinegar.

In a small bowl whisk together salt, black pepper, red pepper flakes, olive oil, vinegar and lemon juice.

In another bowl massage the sliced red onion with salt, rinse, drain and add to the beans. Quarter the eggs, place on the beans, pour the dressing over, garnish with sumac and red pepper flakes, serve.
