Ezogelin Soup

Ingredients:

  • 2 tablespoons olive oil,
  • 1 tbsp tomato paste
  • salt and pepper to taste
  • 8 cups of water or stock
  • ¼ rice
  • ¼ cup bulgur
  • ¾ cup red lentils
  • ¼ cup vermicelli noodles
  • 1tsp red pepper flakes
  • 2 tsp dried mint

Heat oil in a large pot over medium heat. Stir in tomato paste, cook or a minute, add salt, pepper,and the liquid. Bring to a boil.

Stir rice and bulgur into the boiling soup base, reduce the heat to a high simmer, stir occasionally. Test the rice and bulgur, when they are al dente add the lentils, stir until it goes back to a simmer. Cook the lentils stirring occasionally. As soon as the lentils are done, add the vermicelli, pepper flakes and the mint. Let the soup simmer for another 3 minutes, then remove from heat. Serve hot.
