2 cups of Reis black eyed peas, cooked
3 scallions, chopped
¼ cup parsley, chopped
1 red bell pepper, finely chopped
2 tbsp pomegranate syrup
¼ cup olive oil
salt and pepper to taste
Prepare vinaigrette in a jar mixing pomegranate syrup, olive oil salt and pepper.
Toss the remaining ingredients in a large bowl, pour the dressing over, serve cold.
