Lentil Stew

2 cups of dry green lentils

1 tbsp. Butter or margarine

1 large onion, chopped

1 tbsp. Tomato paste

1 medium potato, dices

1 large carrot, diced

2 cloves of garlic, minced

salt and pepper

2 cups of water

In a large pot cover the lentils with cold water and boil for 10 minutes, remove from heat and drain, set aside. In a medium pot, melt the butter, sauté the onions for 2 minutes , add the lentils, onion, tomato paste, potatoes, carrots, garlic, water, salt and pepper. Cook on medium-low heat until the lentil and the carrots are tender. Serve hot.
