Tomato Rice Soup

Ingredients:

  • 2 medium tomatoes, grated
  • 2 tbs. Butter
  • ½ cup white rice, uncooked
  • 6 cups of chicken stock
  • salt to taste
  • ¼ chopped parsley to garnish

In a large pot melt the butter, add the grated tomatoes, cook down until all the liquid is gone. Add the broth, bring to a boil. Add the rice, cover and simmer stirring occasionally until the rice is very tender and start to loose its shape.

Remove from heat. Garnish with chopped parsley and serve immediately.
